Cafe au Lait


Cafe au Lait Parfait

  • 2 envelopes unflavored gelatin
  • 3/4 cup fat-free evaporated milk
  • 1-1/2 cups hot brewed coffee
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1-1/2 teaspoons vanilla
  • 1-1/4 cups ice cubes
  • 1 cup thawed lite whipped topping

Sprinkle gelatin over milk in a blender and let stand 1 minute. Add coffee and blend on low speed 2 minutes or until gelatin is completely dissolved. Add sugar, cocoa and vanilla and blend on high speed until well blended. Add ice cubes, 1 at a time, covering and blending on high speed after each addition until ice is melted. Pour evenly into 6 parfait glasses. Refrigerate for 2 hours or until set. Top with whipped topping just before serving. Garnish with cinnamon sticks and chocolate shavings just before serving.

Holiday au Lait

A spiced coffee that is perfectly suited for the holiday season, but you can make this cafe au lait style drink any time of the year. Cinnamon, vanilla and nutmeg go so well together.

  • 1 cup hot coffee
  • 8 oz. milk
  • 1 oz. vanilla syrup or extract
  • 1/8 teaspoon of each: cinnamon, sugar, allspice, cloves

In the bottom of your mug, mix the spices and vanilla. Fill halfway with hot coffee, then the other half with warm milk.

Iced Cafe au Lait

A simple iced coffee recipe, heavy on the milk. A quick iced coffee recipe is very handy in the summer. No reason to go without your coffee just because the heat is up.

  • 2 1/4 cups coffee, cold
  • 2 cups milk
  • 2 cups crushed ice

Blend all ingredients until frothy. Serve over ice.

Vanilla Cafe au Lait

Vanilla Cafe au Lait offers a mid-morning boost as well as a reprieve from winter's chill.

  • 1 1/2 cups half 'n half
  • 1 1/2 cups whole milk
  • 2 tablespoons sugar
  • 1 vanilla bean, split lengthwise
  • 3 cups hot, strong brewed coffee

Combine the half-and-half, milk and sugar in a small saucepan. Scrape the seeds from the vanilla bean into the milk mixture and add the bean to the saucepan. Simmer over low heat for 20 minutes. Remove the vanilla bean from the milk mixture and whisk for 1 minute. Fill each mug with 1/2 cup of hot coffee and 1/2 cup milk mixture. Serve immediately.
